Ingredients
5-6 pound Prime Rib Roast
Directions
Get a ribeye roast from the butcher
Mix equal parts of onion salt, seasoned salt, garlic powder to make approx 1/4 cup of seasoning.
Pat the mixture on all sides of the roast. May not stick well to fat side, that's ok. Don't worry.
Pre heat oven as high as it will go on bake not broil.
Put roast in a dutch oven preferable on a small rack so it doesn't stick to bottom of pan. Put bone side down, fat side up.
Put a meat thermometer in center of roast.
Cook roast for 5 minutes per pound then shut the oven off.
DO NOT OPEN DOOR FOR THE NEXT 2 HOURS UNDER PENALTY OF DEATH!!!
After 2 hours remove roast and check the temp.
If it is 140 it is a perfect medium rare.
If it is lower than that turn oven on to 375 and check frequent;y until it hits 140 degrees on the meat

Use Au Jus mix from supermarket

    This is the way I have been making mine but hate the smoke and mess in the oven. I do not use salt but substituted onion powder and omitted the seasoned salt. I did use more garlic powder and a bit of rosemary. - 11/30/20
