Tea - Party Mice

1/2 cup butter, room temperature1 cup creamy peanut butter1/3 cup packed light brown sugar1/2 cup white sugar1 egg1 tbsp vanilla extract1/2 tsp baking soda1/2 cup flour1 cup whole wheat flour60 peanuts, halvedColoured decorating "quills"150g red shoestring licorice, cut into 60 pieces
In a large bowl, beat together butter, peanut butter and sugars until fluffy.
Beat in egg, vanilla extract and baking soda until well blended.
Gently mix in flour just until blended.
Cover and chill for 1 hour, or until firm.
Preheat oven to 350F.
Shape dough into 1" balls, tapering each into a narrow oval.
Press flat on one (narrow) side, 2" apart on ungreased cookie sheets.
Decorate as mice, using peanut halves for ears and quill candies for eyes.
With a toothpick, make a hole about 1/2" deep in the tail ends.
Bake 9 minutes
Transfer to a cooling rack and immediately insert licorice pieces in tail-holes. I find using a bit of royal icing helps hold them in place.
