Rardnek's Grilled Spicy Chicken with Black Bean Salsa

1 tsp chili powder1 tsp cumin.75 tsp salt.25 tsp cayenne pepper4 boneless chicken breasts (I use the Costco ones, ~4oz ea).5 c. chopped onion1 jalapeno pepper, seeded and minced1 15oz can black beans, rinsed and drained1.5 c. corn kernels, cooked .5 c. chopped tomato2 Tbsp. chopped fresh cilantro.5 lime, quartered
Preheat grill (or plug in George Foreman :)
In a small bowl, combine first 4 ingredients (spices). Sprinkle half of the mixture of the chicken, coating both sides.
When the heat is medium to medium-hot, grill the turkey, turning once during cooking -- it will take 15-20minutes on the grill (it only takes 5-7 minutes on the Foreman).
In a medium skillet over medium-high heat, saute the onion and jalapeno in the oil for 2-3 minutes, or until onion softens. Add the black beans, corn, tomato, cilantro and remaining spice mixture. Cook for 5-7 minutes, until mixture is heated through.
To serve, plate chicken and top with warm salsa. Squeeze a lime wedge over each serving.
We like to serve it with rice.
