Low-Fat Oatmeal Chocolate Chip Cookies

1 c. All-Purpose Flour1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 tsp ground cinnamon2 tbsp unsalted butter, room temp1/2 c. granulated sugar1/2 c. brown sugar (light)1 large egg1/4 c. unsweetened applesauce1/2 tsp vanilla extract1 c. quick cooking oats1 c. All-Bran cereal1/2 c. semi-sweet chocolate chips
Preheat oven to 350 degrees. Line baking sheet with parchment or sil-pat.
Whisk together flour, baking powder, baking soda, salt, and cinnamon in a med bowl.
Cream butter and sugars in a large bowl or stand-mixer. Beat in egg, then applesauce, and then vanilla extract.
Working by hand, stir in flour mixture and then oats and cereal, until just combined. Stir in chocolate chips.
Drop dough onto prepared baking sheet (tbsp size). Flatten each cookie slightly. Tip: Wet hands just a bit with some water to prevent dough from sticking to fingers.
Bake for 10-12 minutes. As with any cookie - watch them closely! These will dry out if overbaked since there is very little butter. If your oven runs a little hot, pull them out a minute early and let them continue to cook on baking sheet for 3 to 4 mintues outside of oven. Transfer to wire rack to cool completely. Store in an airtight container. Make 24 cookies.
