Chicken Noodle Casserole

6 oz wide noodles2 tbsp olive oil4 tsp all-purpose flour2 cups fat-free milk1 tbsp grated Parmesan cheese2 boneless skinless chicken breasts, cubed1 cup red onion, chopped1 can peas and carrots1 tbsp dijon mustard4 tsp seasoned dried bread crumbs
1. Preheat oven to 375 degree. Spray 2-quart casserole with nonstick cooking spray.
2. Cook cubed chicken in 1 tbsp olive oil. Set aside.
3. Cook noodles according to package directions, drain.
4. In a medium nonstick saucepan over medium heat, heat 1 tbsp oil. Sprinkle with the flour; cook, whicking constantly, 2 minutes.
5. Whisk in the milk and Parmesan cheese; cook, stirring constantly, until thickened, 2-3 minutes. Remove from heat.
6. Stir in noodles, chicken, onions, peas and carrots, and mustard. Transfer to casserole dish.
7. Sprinkle with bread crumbs.
8. Bake until brown and bubbly, 20-25 minutes.
Makes 4 generous 1-cup servings.
