¾ cup dried apricots¾ cup dried apple4 brown rice cakes1 cup unsweetened coconut½ cup sunflower seeds½ cup pumpkin seeds1/3 cup sesame seeds½ cup rolled oats1 ¼ cup fruit sweetener½ cup natural peanut butter slightly warmed
Makes approximately two dozen large spheres. Recipe from Rebar Cookbook, a great restaurant in Victoria, BC, Canada
1 - In a food processor pulse apricots, apples and rice cakes to a fine texture. Transfer to a large bowl
2 - Next pulse coconut, seeds and the oats so that things are roughly combined. Add this to the fruit mixture in the large bowl. Add fruit sweetener and peanut butter. Combine until well mixed and cover and chill the dough in the fridge for at least 1 hour
3 - Roll the dough into bulbs approximately the size of a golf bar. Roll balls until coated in the toasted sesame seed pressing lightly to ensure that they stick. Serve or wrap and refrigerate for a quick snack on the go!
