Paella: chicken & Turkey Kielbasa

Ingredients
1 tbsp olive oil 8 oz of chicken breast 8 oz Turkey kielbasa Small 2 ½ oz onion finely chopped 1 red 4.2 oz bell pepper finely chopped 2 garlic cloves chopped 1 ½ cups medium grain brown rice ½ teaspoon cumin½ teaspoon salt ½ teaspoon of pepperPinch of saffron4oz seeded and chopped tomato 4 cups chicken stock ½ cup frozen peas Total Calories = 1528 1528 divided into 2 servings= 7641528 divided into 3 servings= 510
Directions
Over at 400 degrees:
Heal oil over med. Season chicken with salt and pepper brown
Transfer the browned chicken to a plate add the sausage to the pan and sauté until light browned transfer sausage to the plate with chicken
Drain all but 1 tablespoon of fat from the pan, lower the heat then add the onion, red pepper garlic and cook until tender,
Add the rice, cumin, salt, and saffron stir to coat the rice and cook for 1 minute.
Transfer the rice and vegetable mix to an oiled baking dish arrange the chicken and sausage on the rice and scatter the tomato over the top place the pan on center rack pour chicken stock over the meat and rice bake for 25 min. sprinkle the peas on top and cook another 15 min.
