Slow-cooker Black Bean Chili

1 cup chopped onion1 cup chopped green or red peppers2 cans of black beans 1 can of diced tomatoes 2 T of diced green chilis (or a dried chili works too - just watch the spiciness :) 1 cup water Minced garlic to tasteSalt, pepper, cayenne pepper, garlic powder Olive oil
Saute the peppers and onions in the oil. Add in the garlic and just barely brown it. Stir in the spices.
Rise the beans and add them to the crockpot. Toss in the tomatoes with juice, green chilis, and water. When the peppers, onions, and garlic are ready, toss them in and stir. Cook about 8-10 hours.
Great on its own or over rice. Makes about 5-6 main-course servings, each about 1.5 cups.
