Provence-style veggie skillet

Ingredients
1 T olive oil2 T chicken broth1 large onion, sliced2 large zucchini, sliced (approx. 2 cups)4 large yellow squash, sliced (approx. 2 cups)1 cup sliced mushrooms1 t. herbes de provence1 T lemon juice (or to taste)salt and pepper to taste
Directions
Heat olive oil and chicken broth in large skillet over medium heat. Add onion, stirring to cook 2 minutes. Add sliced zucchini, yellow squash, and mushrooms, cooking until the doneness you prefer - approximately 10 minutes for cooked, but not mushy vegetables. Add seasonings, and cook 1 more minute. Serve immediately.
