Ingredients
Cooking Spray2 Skinless Chicken Breasts, chopped into 2-inch cubes1 lb Red Potatoes, chopped into 2-inch cubes1/2 bunch asparagus, trimmed and cut into 1-inch pieces (OR Red & Green Peppers, OR Vegetables of your choice)1/3 c fresh basil, chopped4 garlic gloves, thinly sliced1.5 TBSP Olive Oil1 tsp chopped fresh rosemaryGround Pepper to Taste1/2 cup Chicken Broth if desired
Directions
Preheat oven to 400 degrees and spray a baking dish with cooking spray. Add chicken, potatoes, tomatoes, vegetables, basil, garlic, chicken broth, and olive oil. Sprinkle with rosemary. Add pepper if desired. Bake for approx. 45 minutes, turning occasionally, until tender. Serve.

    Awesome recipe, I added 5 tsp of basil and sprinkled the rosemary on top. I used dried spices instead of fresh. I used green and red pepper as well as onion and it was great. This is one of our new staples. Thanks - 7/26/10

    Not bad! I used vegetable broth, asparagus, green beans, and zucchini in mine. I also added salt and a bit of low sodium soy sauce. Next time I would add some red pepper flakes or cayenne powder for a little heat. - 4/5/11

    Pretty good. used thin sliced chicken tenders, asparagus, and yukon gold potatos. came out pretty good, used half a can or so of broth and covered with foil. hubby really liked it. didnt make much, double recipe next time - 12/20/10

    Some veggies don't do so well in the oven for my taste, so I like to steam them instead so they are more vibrant in their color and texture. I love all of the other ingredients and the chicken really tastes good with the olive oil, fresh basil and garlic. - 1/31/14

    Have made this recipe for a long time now but I use the whole chicken breast and not chopped. Usually use peppers, mushrooms, onions, garlic and sweet and/or white potatoes. For more than 2 chicken breasts use two rimmed cookie sheets - one for the chicken and the other for the vegetables. - 1/31/14

    Although the comments seem to be good, 400 degrees for 45 minutes seems quite hot and a long time for chicken to be cooked. Has anyone found the chicken pieces to be a bit tough? I usually go with 356 degrees for 30-35 minutes. - 3/7/13

    I had to cook my veggies separate, due to their frozen nature. I had to omit the rosemary as I do not have any. I used dried basil, but even with those modifications it was very good! My boys (who don't really eat that many healthy things) enjoyed it and cleaned their plates! - 1/6/13
