Easy Lentil Soup

Ingredients
1 Cup uncooked lentils4 cups veggie stock1 diced onion1 clove garlic1 large can chopped/diced/crushed tomatoes (whatever you have on hand)
Directions
Rinse lentils first. Put all ingredients in a large cooking pot. Bring liquid to a boil. Cover and simmer for 23-30 minutes. Makes a great take to work lunch!

    Tasty. Added about half cup chopped carrots. Sauteed carrots and onions a few minutes before adding remaining ingredients, and a pinch of cayenne pepper. Pureed for a creamy soup. - 2/3/19
