Grilled Veggie Stuffed Pita

Ingredients
1 red bell pepper1 green bell pepper1 small zucchini2 portabella mushrooms1 tbsp extra virgin olive oil2 tbsp Blue Bonnet Light MargarineKosher salt and fresh ground pepper to taste
Directions
Cut peppers into strips. Cut mushrooms into pieces, and cut zucchini into thin slices. Heat olive oil and margarine on medium high in non-stick skillet. Add kosher salt and pepper to veggies to your taste. When skillet is hot, add veggies and saute until tender. While that is cooking, open pita pockets. When veggies are ready, stuff each pita full. You can either put the stuffed pitas back in the skillet after the veggies are out or use a griddle with a little spray of Pam to toast up the sides of the sandwich. Enjoy!
