Chicken Chop Suey

2 Tbs. olive oil1 large chicken breast (about 1 1/2 cups) diced1 cup diced onion 1 cup diced carrots1 cup diced celery 1 cup hot watersalt and pepper to taste2 cups bean sprouts, rinsed1/3 cup cold water2 Tbs. arrowroot starch (flour) 2 tsp. reduced sodium soy sauce1 tsp. raw sugar
DIRECTIONS
1. Heat olive oil in a large, deep skillet or wok. Sear chicken until it turns white, then add onion and saute for 5 minutes. Add carrots, celery, hot water, salt and pepper. Cover and simmer for 5 minutes. Add sprouts and heat to boiling.
2. In a small bowl combine the cold water, arrowroot starch, soy sauce and sugar. Mix together and add to skillet mixture. Cook for 5 minutes, or until thickened to taste.
Makes 3 1/2 one cup servings.
