Ingredients
1 large chicken breast, sliced fajita style1 medium onion, sliced fajita style1 poblano chili, sliced fajita style1 clove garlic, crushed or minced1 large carrot, shredded1/4 cup shredded coconut - sweetened or not1 - 1 1/2 tsp curry powder1/2 - 1 tsp garam masala (opt)1/4 tsp kosher salt or less dash cayenne pepper (opt)2 whole wheat tortillas, warmed2 Tbsp fat free sour cream (opt)
Directions
Heat the oil in a skillet, medium hot. Add chicken and all the veggies. Stir fry for about 8 minutes. Reduce heat. Add the spices, stir in well. Cook for about another 2 minutes. Pile half the mixture into each of 2 warmed whole wheat tortillas. Top with 1 Tbsp fat free sour cream if desired. Makes 2 generous servings.
