peach strawberry muffins

Ingredients
2 cups whole wheat pastry flour2 tsp baking powder1/2 cup softened butter1/2 tsp salt2 large eggs1 cup sugar1/2 cup nonfat milk1 tsp vanilla extract1/2 cup fresh strawberries crushed2 cup peaches sliced into small pieces
Directions
1. Heat oven to 375 degrees F. Line twelve 3-inch or fourteen 2-1/2-inch muffin-pan cups with paper liners.**

2. Combine flour, baking powder and salt in a bowl; set aside. Beat butter and 1 cup of the sugar in a large bowl at medium speed until light and fluffy. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with milk and vanilla, beginning and ending with dry ingredients, until batter is smooth.

3. Crush 1/2 cup strawberries and add to batter. Fold the peaches into batter with rubber spatula. Divide and spoon batter into muffin-pan cups.

Bake 30 minutes or until toothpick inserted in center comes out clean. Cool muffins in pan 5 minutes, then remove from pans onto wire rack. Makes 12 muffins.
