Macaroni & Cheese (vegan) - from 7 Secrets Cookbook

3 cups dry macaroni (whole wheat preferred)1 can coconut milk1 1/4 cup water1/4 cup yeast flakes2 tsp salt1/4 cup raw cashew pieces1/4 cup pimentos3 Tbl lemon juice1/4 cup cornstarch1 tsp onion powder1/4 cup soy milk POWDER (plain flavored-not vanilla)
1. Cook macaroni in 5 quarts of boling water with salt until soft. Follow package directions for whole grain pasta.
2. Meanwhile, blend remaining ingredients about 2 minutes until very smooth.
3. Drain cooked macaroni and return to pan. Pour blended mixture into hot, drained macaroni and cook together until thick, stirring gently. Add 1-2 cups frozen peas or 1 cup mushrooms or sliced olives, if desired.
4. Cover and let sit 5 or 10 minutes before serving, or put in oiled casserole, cover with seasoned bread crumbs and bake. Tip: if reheating put a little water in, tends to get a little dry.
