Balsamic Grilled Vegetables w/Feta Cheese

Ingredients
1 Zucchini - Cut into 1/4" thick slices1 - Green Pepper, quartered1 - Red Pepper, quartered1 - Red Onion, sliced 1/4" thick1/2 cup Extra Virgin Olive Oil3 tbs Balsamic Vinegar1 tsp OreganoSalt and Pepper to taste
Directions
Grill vegetables on stove top grill, or on barbecue grill, until softened and marked from the grill. Cube vegetables into bite sized pieces. Whisk together olive oil, balsamic vinegar, oregano, salt and pepper. Pour dressing over vegetables, crumble feta on top and mix. Serve immediately or store in refrigerator for up to 5 days. Serves 5.
