Roast Pork Loin

  • Number of Servings: 8
Ingredients
1 boneless pork loin, about 2 3/4 poundssalt to tastefreshly ground black pepper1 tablespoon minced, fresh herbs (thyme, rosemary or tarragon)1 cup dry white wine
Directions
1. Preheat the oven to 350°F.
2. Place the pork loin in a roasting pan and sprinkle with the herbs, salt and pepper.

3. Pour the wine* into the bottom of the pan and baste occasionally. Roast the pork for about 1 1/2 hours until a meat thermometer reads 160°F.

4. Let the meat rest about 15 minutes before slicing.

Serving Size: 6 ounces

* Depending on your personal oven you my need to add some water along with the wine or just add more wine.

    My pork loin was already preseasoned with these herbs. I added a small can of sliced shitake mushrooms on top during the last 30 min. Package directions said to cook at 425, so it didn't take as long to cook. Delicious. - 7/3/09

    Simple to do, low in Cal, & taste great! I added a side of Krout which increased fiber, leaving a little room for a desert for the kids. - 3/6/09
