Low Fat Yellow Cake

Ingredients
1 box Pillsbury Reduced Sugar Classic Yellow Cake Mix1/2 cup no sugar added applesauce1 can mandarin oranges in light syrup (with juice)4 egg whitesICING:8 oz. fat free Cool Whip1 big can crushed pineapple (no sugar added)1 pkg vanilla instant fat free sugar free pudding mix.
Directions
Preheat oven to 350 degrees. Combine the cake mix, applesauce, mandarin oranges (including the juice), and the 4 egg whites in a bowl. Beat on medium spead for 2 minutes. Spray cake pan with PAM and pour in batter. Bake for 34 minutes or until a toothpick inserted comes out clean. Cool cake completely before icing.

ICING: Combine the Cool Whip, crushed pineapple (including the juice), and the pkg of pudding mix. Blend on medium speed for 2 minutes. Spread on cooled cake. Serves 12, cake can also be cut and frozen to be eaten later.
