1 tub (18 oz.) refrigerated barbeque sauce w/shredded beef1, large green sweet pepper, chopped (~1 cup)1, large onion, chopped (~1 cup)1, 7.5 oz. packaged refrigerated biscuits (10)1/2 cup shredded cheddar cheese (4 oz.)1 1/2 cups shredded lettuce2 roma tomatoes, chopped
1.) In a large microwave safe bowl combine shredded beef, sweet pepper, and onion. Microwave on 100% power (high) for 3 minutes, stirring once. Meanwhile, lightly grease a heavy large skillet with flared sides. Press biscuits into the bottom and halfway up the sides of the skillet, moistening edges of biscuits and pressing to seal.
2.) Cook crust, covered, over medium heat for 3 minutes. Check crust and press with fork to seal any holes. Spoon beef mixture into partially cooked crust. Sprinkle with cheese. Cook, covered, for 9 to 14 minutes more or until edges of crust are light brown.
3.) Loosen edges and carefully slide onto serving platter. Cut into wedges.. Sprinkle with lettuce and tomato.
