Low-Fat, Low-Cal Yummy Peach Muffins

1 cup Flour3 tsp Baking Powder1/2 tsp Baking Soda1/4 tsp Salt1/8 cup Splenda Sugar Blend for Baking2 large egg whites1/2 tsp Vanilla Extract2 TBS Naturally Yours Fat Free Sour Cream8 small fresh Peaches, pureed
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together peach puree, Splenda Baking Blend, egg whites and vanilla. Stir in the sour cream. Stir peach mixture into flour until just combined. Scoop batter into prepared muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving.
