Slow Cooker Savory Pork Chop Dinner

Ingredients
1/2 tablespoon extra virgin olive oil1 small onion, peeled and cut into wedges6 to 8 very small new potatoes1/2 teaspoon freshly ground black pepper1 dash of salt1/4 teaspoon garlic powder1 tablespoon rubbed fresh sage1 tablespoon crushed fresh rosemary1 teaspoon ground thyme2 top loin pork chops, trimmed of all visible fat1 15-ounce can of low-fat cream of mushroom soup1/4 cup white wine
Directions
Measure oil into slow cooker. Add onion wedges and small new potatoes, cut into bite-sized chunks, if necessary. Sprinkle with ground black pepper, a dash of salt, garlic powder, sage, rosemary and thyme. Toss to coat vegetables evenly with oil and seasonings.

Trim all visible fat from pork chops and wash thoroughly. Lay on top of vegetables in slow cooker. In a small bowl, whisk together mushroom soup and wine until smooth and well-blended. Pour soup mixture over chops.

Cover and cook on low a minimum of 6 hours.

Makes 2 servings.

    I was disappointed. I followed the original recipe with one exception (I added carrots to the vegetable bed) and after cooking the recommended time, the meat was dry and flavorless. The vegetables were good (but not great), so we probably won't have it again. It's too bad because it looked good. - 9/21/10

    I'm sorry to hear you were disappointed. You might consider giving it another try reducing the cooking time. Cooking time will vary depending on the thickness of the chops. Also, some slow cookers cook at slightly higher temps. I've never had a dry or flavorless result.

    My mother made this for four so I'm not sure what she changed. I thought it was a delicious recipe but I would cut down on the pepper and maybe some of the rosemary, as well as add more vegetables - it seems they shrunk after cooking! Overall, very, VERY satisfying. A good winter recipe. - 1/13/10

    The seasonings should be adjusted to taste. I like to add chunks of carrots and celery to the veggie bed, but that doesn't go over so well with DH. I generally serve this with a salad and either steamed broccoli or green beans.

    It is sort of comforting to have a meal that feels substantial.

    this is AMAZING!!!!! i've already cooked it twice this last week and have it in the menu for next week! I don't care for rosemary, so I added a little marjoram and oregano instead; I also added chopped carrots, to get another veggie in there. soooo yummy! - 8/30/09

    Thank you for taking time to leave this complimentary comment on my recipe. Since I first ran this through the recipe calculator and posted it, I have changed it a bit, eliminating the oil to cut down a bit more on the calories & fat.
