Spicy Thai Beef noodle soup

6 oz packaged rice noodles or vermicelli2 tsp peanut oil4 medium green onion green and white divided and chopped1 medium jalapeno pepper , seeded and minced1 TBSP ginger root minced6 oz lean beef round trimmed of fat and diced7 cups FF beef broth2 TBSP low-sodium soy sauce1/2 cup frozen green peas2 TBSP cilantro chopped1 tsp hot pepper sauce or to taste
Using a sharp knife cut noodles into 3 inch pieces.
Heat oil in a med saucepan over med heat,Add white green onion,jaleapeno pepper, ginger saute 1 min. Add beef and saute until browned all over 3 min, stirring consantly. Add broth , soy sauce, bring micture to a boil, Reduce heat to med low simmer 10 min. Add noodles, peas,and simmer 3 min longer, Remove from heat add green onions, cilantro, hot pepper sauce, Serve hot, Yeilds 6 servings.
