Chicken Caruso and Rice

Ingredients
1 C uncooked long-grain rice4 chicken breast halves¼ tsp garlic salt¼ tsp pepper2 C celery, sliced2 Tbsp butter or margarine, melted15 oz spaghetti sauce (Nana uses Ragu garden vegetable)1 tsp Italian seasoning(optional) grated parmesan cheese
Directions
Cook rice and set aside. Cut chicken into bite size pieces; sprinkle with garlic salt and pepper. Sauté chicken and celery in butter in a non-stick skillet 4-5 minutes or until no longer pink. Stir in spaghetti sauce and Italian seasoning. Bring mixture to a boil; cover, reduce heat, and simmer 10 minutes. Serve over rice. Yields 4 to 6 servings.

    My mother made this when we were kids! She even used Ragu. It's a staple in my home. I've altered it slightly to make it more healthy by cooking with olive oil instead of butter and serving atop of Brown Rice. It's delicious! - 1/19/09
