Mediterranean Frittata

Ingredients
1 1/3 c eggbeaters1 tbls half and half (fat free)1/4 tsp salt1/2 tsp oregano1/2 tsp pepper1 tbls garlic2 tbls leeks chopped1/4 c parmesan cheese1 tbls parmesan cheese1/4 c low fat mozzarella1/2 c zucchini diced1 c spinach fresh1/2 roma tomato (seeded)
Directions
Preheat oven to 350 degrees.

Whisk together half and half, eggs and spices in a large bowl. Then mix in leeks and garlic, followed by cheese and lastly the vegetables. Pour ingredients into 4 ramikens then sprinkle top with remaining parmesan cheese.

Bake at 350 for aproximately 30 minutes or until solid.
