Italian Chicken-Lentil Soup

Ingredients
2 chicken thighs1 med onion1 zuchinni1 cup dried lentils, rinsed and sorted4 cups chicken stock (2 cans or 1 box, it's flexible)salt and pepper to taste1 can diced tomatoes (28 oz)1 tbls dried basil
Directions
Remove fat from chicken and chop veggies. Place in slow cooker with all ingredients except zuchinni. Cover and cook on low for 4 hours. Remove chicken and use forks to shread. Return to cooker along with zuchinni and cook 1-2 more hours.

Makes about 6 bowls.

    I did some substitutions because of what I had on hand: canned chicken, spinach, italian seasoning, and italian-style diced tomatoes - 1/27/09
