Zucchini and Onions

Ingredients
1 Medium Zucchini, sliced (400 G)1/4 of a large onion, sliced (100 G)1 TSP oilPepper and Salt to taste.
Directions
Place teaspoon of Oil in pan and heat. When oil shimmers in the bottom of the pan, add zucchini and onion. Cook as if you were doing home fries so the veggies actually carmelize a little bit. Add Pepper and cover. Let the zucchini and onions finish cooking by steaming. Add salt after putting on the plate.

This side was totally delish and very very filling. I ate the whole batch myself with a hamburger, but if you had additional sides with dinner, you could probably get 3 3/4 cup servings from this recipe.
