Red Pepper and Corn Fritters (2 Fritters)

1/2 cup chopped red pepper1 - 15 oz can whole kernel corn, drained1 large egg1/2 cup nonfat milk1 - 8.5 oz box of Jiffy Corn Muffin Mix1/2 cup AP flour1/2 tbsp kosher salt1 tsp fresh ground black pepper
Drain corn, and add all ingredients to a large mixing bowl.
Spray griddle or pan preheated to medium heat with nonstick spray, or brushed with margarine.
Using a large spoon, dollop enough mixture onto griddle to make two batches of eight fritters.
Cook like pancakes, until golden brown on the bottom and flip until gold brown on second side.
Sprinkle with additional salt to taste and serve with butter/margarine or sour cream.
