Caramaea's Chicken Chick Pea Chili

Ingredients
2 lb. boneless skinless chicken breast, cubed.4 cans (no sugar added) tomato sauce1 large can kidney beans (or 1 bag, remember to pre-soak)3 regular sized cans chick peas2 cans of Ro*Tel (diced tomato and green chili)2 yellow onions, chopped.chili powder to tastecrushed garlic to taste2 dried pablano peppers
Directions
Sautee chicken with onions and spices before adding to wet incredients and beans. Cook on medium heat for 45 minutes or until hot (can also be cooked on low for several hours).

*Note: she cooked for 10 and had leftovers so I estimated it at 12 servings.*

Optional: top with a dollor of Sour Cream or some shredded Cheddar Cheese (not included in nutritional info).

    Thanks Nadalia!! We "borrowed" the idea for this recipe from Panera Bread. They have a good chicken chickpea chili. Ours is out of this world! - 8/28/08
