Pacifico-style Rice

Ingredients
1 c white rice2 c water1 tbsp extra virgin olive oil1/2 lime (juice only)1/4 c cilatro chopped
Directions
Heat olive oil in pan
Add in rice and lime juice; stir for 1 minute
Add in water & bring to rolling boil
Reduce heat, cover & simmer for 25 mins
When done, add in cilantro & serve.
Makes 4 1/2 c servings
