Pineapple Banana Muffins

Muffin Ingredients:3 cups flour1 cup sugar1 tbsp cinnamon1 tsp baking soda1/2 tsp salt2 cups diced bananas (about 3 very ripe ones)1 1/2 cups unsweetened apple sauce1 cup crushed pineapple3 eggs1 tsp vanilla extractTopping Ingredients:1 tbsp lemon juice1 cup powdered sugar
Muffins: Mix dry ingredienets. Add bananas and toss to coat. Add wet ingredients. Stir with spoon to moisten. Bake at 350 for approximately 30 minutes, depending on your altitude and the type of muffin pans you are using. Makes around 20 muffins. Keep them in the refridgerator to keep the bananas good.
Topping: Mix powdered sugar and lemon juice. Make sure that the muffins have cooled before applying topping, as it will run off the sides if they have not.

The recipe itself does not list a cup of sugar although the Ingredient Detail does. Is that correct ? - 6/14/09

Actually it's the second ingredient on the list. It could probably be made without extra sugar, however - the fruit is pretty sweet.
