Baked Zucchini

Ingredients
1 Lrg Zucchini cut into Wedges- 2-3" long & 1" thick1 Whole egg & 1 White beaten together2 slices Whole Wheat Bread, stale1 Cup Parmesan Cheese, finely gratedSalt & Pepper to taste ( I omited salt completely and tasted great)
Directions
Cut Zucchini into wedges 2-3" long & 1 " thick. Beat eggs & whites together. Meanwhile using a blender or food process pulse to make bread crumbs. Mix bread crumbs, cheese, salt & pepper. Dip zucchini pcs into eggs then roll in crumb mix. Place on a prepared(sprayed with cooking spray) baking sheet. Continue until all zucchini is coated. Place in oven and bake for 20-25 minutes or until zucchini is tender. Serve with light ranch dressing or favorite pasta sauce.

    Yummy! I sliced the zucchini instead of wedges, but it was still good. (although I will probably use wedges next time. - 9/4/08
