Jenn's Lighter Balsamic Reduction Dressing

1 cup balsamic vinegar1/4 cup shredded onion1 tbsp. Dijon Mustard3 tbsp. Olive oil
Heat saucepan, and add onion and vinegar. Bring to a boil, then turn down to simmer whisking occasionally. Let bubble and simmer until reduced by half. Cool. When cooled, add Dijon mustard. Add olive oil in a slow steady stream, whisking continuously. Serve on baby greens. Great with pears, gorgonzola cheese, and candied walnuts. Not much dressing is needed, as it is very thick. Be sure to toss your salad well so the dressing is dispersed evenly.
