1 Jar Ragu Light Tomato & Basil1 container part skim Ricotta cheese1 cup shredded Mozzrella cheese2 cups frozen spinach - squeezed1/4 cup chopped onion 1 egg3 Tbsp Parmesan cheese1 8 oz boneless chicken breast- cooked & chopped8 Egg Roll Wrapperssalt & pepper to taste1 Tbsp Italian seasoning
In a large mixing bowl combine the ricotta, spinach, onion, egg, parmesan cheese, chicken, italian seasoning, salt & pepper. Mix well. Put 1/2 cup of the mixture in each egg roll wrapper. Roll up and either leave ends open or pinch them closed. Pour a small amount of sauce in 9 x 13 baking pan. Place rolls in pan single layer and pour remaining sauce over rolls and sprinkle with mozzrella. Bake at 350 for 40 minutes. Makes 8 servings
