12 oz peeled, deveined, cooked shrimp1 tsp finely shredded lime peel1/3 cup lime juice1/4 cup olive oil2 tbsp fresh cilantro1 clove garlic, minced
Thaw shrimp, if frozen. Rinse shrimp and pat dry. In a medium bowl combine lime peel, lime juice, olive oil, cilantro and garlic. Add shrimp and toss to coat. Cover and marinate in the fridge for 2 to 3 hours, stirring.
