chicken and rice soup

Ingredients
1 chicken breast (left over chicken works really well too1 carrot (peeled and cubed)1 potato (peeled and cubed)1 stalk of celery (diced)1 onion (peeled and chopped)1 can chicken broth ( or 2 chicken bullion cubes)1/4 cup long grain white rice3 cups of water1 tsp. olive oil salt and paper to taste
Directions
1. cook the chicken with a little oil over medium heat
2. add the onions and celery and cook for 15-20 mins. (don't forget to stir)
3. add the potatoes, carrots, broth or cubes plus the water over high heat.
4. cook until the potatoes and carrots are done. (about 1/2 hour)
5. add the rice and cook for another 15-20 mins.
