Vegetarian Sandwich

Ingredients
1/2 c Bok Choy1/4 c. diced onion1/4 c cucumber (with skin)1/4 diced fresh mushrooms1/2 red pepper raw1/2 carrot1/4 cup raw summer squash2 tbsp hummus1 tsp. yellow mustard3/4 tbsp lite low fat mayonnaise4 slices whole wheat bread(note: if you want more cal. add spinach and tomato) which is not included in the nutritional info.1 tsp. Light becal margarine I blended everything in a chopper machine on courser setting.
Directions
Mix all ingredients in a med. size bowl including the hummus.
Spread on lightly buttered bread

If any left after making sandwich, it will make a nice side salad.
