Egg cups

Ingredients
1 carton egg substitute6 slices ham (30 calories per slice) diced3 oz grated mozzarella cheese1 large bell pepper diced (use whatever color you like)1 large tomato, diced
Directions
Preheat oven to 400 degrees.

Mix all ingredients together. Using a measuring cup, scoop approximately 1/2 C of mixture into each muffin tin. (Should fill 12 tins) Bake for 20 minutes or until eggs are set.

This can be frozen and microwaved for individual servings.

If you prefer vegetarian, substitute more veggies instead of the ham.
