Southwestern Corn Casserole

Ingredients
1 medium onion, chopped1 sweet bell pepper (red) chopped3 jalapeno peppers, seeded and finely chopped3 Tbs Extra Virgin Olive Oil1/4 cup Creamed Cheese1 small can Cream of Mushroom Soup1 can creamed corn2 cans whole kernel corn, drained3 medium tomatoes, seeds removed and coursely chopped 1/4 tsp sage1/4 tsp pepper1/4 tsp salt1/4 tsp celery seed1 cup grated cheddar cheese or monterey jack. 2 oz Tostito corn chips - broken up
Directions
In a large sauce pan, saute onion and peppers in olive oil until onions are clear. Add soft cream cheese and stir until melted. Add soup, corn and tomatoes and seasonings. Heat on medium until warm and bubbling. Place in a 9x13 baking dish and sprinkle with cheese. Top with broken corn chips and bake in 375 degree oven for 35 minutes. Serves 12.
