Chile Verde Stew

Ingredients
8 oz. center cut pork chops, trimmed and cubed1/2 c. chopped green chiles (anaheim)1 can chopped tomatoes w/juice1 can black beans, drained and rinsed1 can chicken broth1 small onion, chopped1 large carrot, peeled and chopped2 garlic cloves, choppedfresh oregano (dried is ok, too)1 t. olive oil
Directions
Heat pan with olive oil. Add pork and garlic and cook for about 5 minutes, or until pork is seared. Add onion, carrot and salt. Cook until onions are transluscent and pork is tender and cooked through. Add beans, tomatoes, oregano and broth and bring to a boil. Cover and simmer for 15-20 minutes. Serve with tortilla or low fat tortilla chips.
