Easy Margherita Chicken

Ingredients
1 package boneless skinless chicken breasts (about 1 pound)1 can diced tomatoes2 roma tomatoes, sliced20 leaves basil5 ounces fresh mozzarella (or about half a large ball of cheese)
Directions
Pour diced tomatoes into 9 x 13 baking dish. Trim and pound one package of boneless, skinless chicken breasts, cutting larger breasts in half. Lay chicken in dish. Cook for 15 minutes at 350 degrees Farhenheit. Remove dish and top chicken with thin slices of tomato and mozzarella and basil leaves. Put back in oven for another 10 minutes or until juices run clear. Serve over orzo pasta.

    Suggest adding italian seasonings, a couple garlic cloves and small amount of extra virgin olive oil for extra flavor. Overall a really good dish - 3/9/09
