red beans & rice

Ingredients
1 can diced tomatoes1 can kidney beans1 cup chicken broth1 cup onions2 tsp olive oil4-5 cloves garlic1 cup diced hamcajun seasoning to taste2 cups cooked rice
Directions
Heat oil in large pan.
Add onions & garlic, saute about 5 minutes
Add tomatoes, beans, ham, broth and seasoning. Bring to a boil; reduce heat & simmer about 1 hour.

Serve over rice

Makes 4 servings (about 3/4 cup beans to 1/2 cup cooked rice)

    Haven't tried this recipe, to lower the sodium levels, use lower sodium tomatoes, chicken broth and even the ham. Can use dried red beans, soak and pre cook. Takes some searching in the grocery store, but these ingredients can be found. Also, look for cajun seasoning that has lower or no sodium. - 10/9/08
