Singapore Fried Vermicelli

2 tbsp peanut oil1/2 cup chopped onion1/2 cup chopped green pepper1 1/2 cups sliced mushrooms3 cooked, diced chicken breasts4 cups rice vermicelli, soaked and drained3 tbsp chinese curry powder1/4 tsp chicken bouillon dissolved in 1/2 cup water1 tbsp fish sauce
Heat oil in wok. Add veg. Stir fry for about 2-3 minutes. Add chicken. Stir fry until heated through.
Add vermicelli and mix in. Sprinkle with curry powder and pour over bouillon liquid. Mix vigorously to evenly coat everything.
Add fish sauce and toss. Serves 3 as a main course (Nutrition Info) or about 6 as a side dish.
