1 lb Lean Beef Stew meat or bottom round cubed2 t Olive Oil4 t Better Than Bullion Vegetable Soup Base30 oz hot water1 28 oz can diced tomatoes2lbs peeled and cubed butternut squash20 dried apricot halves quartered12 oz baby carrots chopped in half1/2 t salt1/2 t pepper3T Italian Seasoning1/4 cup arrowroot powder1/2 cup water
Brown beef in oil until lightly browned all over. Place in bottom of 6qt slow cooker. Add in soup base mixed with hot water, tomatoes, squash, apricots, carrots, Italian seasoning, salt and pepper. Cover and cook on high for 6 hrs. Vegetables and meat should be tender.
Combine arrowroot and water, stir into stew. Recover and cook on high until thickened, about 30 minutes.
