Baked Potato Soup

Ingredients
2 Baking potatoes2 tbsp. butter1 cup onion, diced2 tbsp. flour4 cup chicken broth2 cup water1/4 cup cornstarch1 1/2 cup instant potatoes3/4 tsp. pepper1 tsp. salt1 cup half-n-halfcheesebacon
Directions
1. Preheat oven to 400 degrees.Bake potatoes 1 hour.
2. Melt butter, sautee onion. Add flour and whisk.
3. Add broth, water, cornstarch, potato flakes, salt and pepper. Bring to a boil. Simmer 5 minutes.
4. Cut potatoes into chunks, add to soup base with half-n-half. Bring to boil. Simmer 15 minutes.

    Thanks for adding this, it is very similar to mine except I use half/half and 1% milk to lower the fat. I also add a few tsp of Tabasco sauce and some cayenne to the milk mixture to add a nice kick. - 11/22/10
