Vegetarian Minestrone Soup

1 tablespoon olive oil1/2 cup chopped onion1 leek, white part only, chopped2 cloves garlic1 can (28 oz.) tomatoes, crushed4 red potatoes, quartered2 carrot, sliced1 celery stalk, sliced1/2 cup barley11/2 cups corn1 cup frozen peas1 can (16 oz.) white beans, drained and rinsed1 teaspoon basil1 bay leaf1 tablespoon salt1 teaspoon black pepper
Saute onion, leek, and garlic in oil. Add tomatoes and one can water, potatoes, carrots, and celery. Cook 25 minutes. Add barley and cook 10 minutes. Add remaining ingredients and cook 20 minutes or until barley is done. Makes about 1 gallon.
