Benny's Ground Chicken and Beans

Ingredients
Ground Chicken 1lbRed Beans - 1 can Black Beans - 1 can Tomato's - diced Green Pepper Red PepperOnion - large (1/2)Grapeseed Oil Garlic - chopped, about 2 cloves
Directions
Brown the ground chicken in one pan. Use about 1 tbs of grapeseed oil. Mix in a couple shakes of Mrs Dash, and 1 tbs of diced garlic.

In a seperate pan, sautee peppers and onion, add 2 tbs of minced garlic.

Drain, and rinse beans in a strainer, add diced tomato's and put into pan with peppers and onions. When meat is browned, add. Let it simmer for approx 10 minutes.

Optional: Serve over brown rice, and/or fat free re-fried beans.

    I made this tonight and put it over romaine lettuce - like a taco salad. It was filling and awesome. My DH even liked it. This is definitely a keeper. The only changes I made was I used "rotel diced tomatoes" drained and rinsed and used more garlic, added cumin & paprika. Thank you - 6/19/10

    You could save even more money by grinding the chicken yourself. You can find chicken breasts (boneless skinless) for $1.99 on sale! Then, just cut them into cubes and put in the food processor and pulse until ground. It really works! - 11/11/08

    this recipe was eatable but that was about it. it was too bland. i had to use a little salt and my husband used tapatio. we wrapped the mixture in whole grain tortillas, but ,even with the hot sauce, he still left half on on his plate. we don't know what to do with the leftovers now :/ - 1/31/12

    I tried it tonight. It was really good, though I added 2 T roasted garlic tomato paste, 1/2 t each cumin & paprika for extra flavor. Also, I used 1 can Fire Roasted Tomatoes Salsa Style from Adli's or you could substitute Rotel's for the diced tomato. I used Paul Dean's house seasoning instead, too. - 11/16/11

    This sounds yummy--but the nutrition info has to be off a bit. With that much chicken in the recipe there should be over 20 grams of protein per serving. - 4/2/09

    WHOA! This is WAY more than 4 servings, even if you don't add any rice to it! It is a HUGE pot (and I am a "healthy" eater). I would add more garlic and some adobo sauce to zip it up! - 12/9/08

    I use lean ground turkey, add cayenne pepper (Bam!), and serve over naked baked potatoe. Probably healthier over the brown rice though. - 12/4/08

    Its similar to Olive Oil, and can be found in the same spot at the market. I have read that it helps lower bad cholesterol while raising the good one. I think it was in Bob Greenes book.
