Crock pot Carbonnade of beef

Ingredients
* Beef chuck, 2 lb * Flour, white, .25 cup * Salt, 1 tsp * Pepper, black, 1 dash * Olive Oil, 1 tbsp * Onions, raw, 2 sliced, medium * Regular Beer, 12 fl oz * Thyme, ground, .25 tsp * Bay Leaf, 1 tsp, crumbled * Parsley, dried, 1 tbsp * Garlic, 1 clove * Carrots, raw, 1 cup, chopped * Turnips, 1 cup, cubes
Directions
1. In skillet, Saute' onions in oil until transparent; add garlic, cook for 2 minutes then remove and set aside.

2. Dredge meat with flour salt and pepper and brown.

3. Place all in slow cooker, simmer at least 3 hours on high (until vegetables are tender). Or on low for 6 hours.

Makes 6 servings.

    This sounds very good-can't wait to try it! I do think I'll try substituting another veggie (potatoes?) for the turnips as our family isn't fond of them. - 10/8/08
