Stir-fried courgettes, tomatoes and falafels with couscous.

Ingredients
dollop of olive oil for frying1 courgette (zucchini) chopped into big penny slicesnormal sized red tomatoes choppedhandful or so of dried fragant couscous per person*add other vegetabels or garlic if you like
Directions

Turn on the hob and heat a big frying pan with a dollop of olive oil in it.

Start off preparing the vegetables:
Chop 1 courgette (zucchini) into big penny slices and the tomatoes into quarters. Stir fry the courgette slices into the pan. When the side underneath starts to brown - flip them over and fry the other side. When you flip the courgette slices over, add the chopped tomatoes and the falafels (basically, you just want to heat them thoroughly and cook them slightly).

While the vegetabels are cooking, prepare the couscous by adding boiling water to a small amount of couscous (the size of about a handful per person) in a bowl/small pan. The water should be about 1 inch higher than the couscous (its sucks up all the water, so rough measurements are ok), and make sure to cover the bowl with couscous completely to allow the hot water to cook the couscous and evaporate, which should take no more than 5 mintues.

Once the other side of the courgette slices are cooked, turn off the pan and dish up the couscous with the vegetabels and falafels on top.
