Crunchy Curry Coleslaw

Ingredients
1 TBS cider vinegar1 cup light mayo1 tsp cumin (or curry - up to 1 TBS is fine, depending on your taste)1 tsp. salt1 tsp black pepper1/2 head cabbage, shredded1 stalk celery, diced small1/2 cup onion, diced small1/2 cup raisins, unpacked (golden or brown)1 large carrot, peeled and grated2 green apples, diced (peel if you prefer)You may also add a shredded summer squash or small zucchini, if you like. This makes it moister and adds vitamins!
Directions
Mix mayo, curry, salt, pepper, splenda, and vinegar in bottom of large mixing bowl. Add vegetables and stir to coat. Chill.

Use soy mayo to make it vegan, or cut mayo to half a cup to reduce calories.

    This was divine, I did do a few variations, I used the dole bag mix of coleslaw, I used malt vinegar instead of the apple cider vinegar,I did not add the onion,I put in the zest and juice of one lemon,I grated in the apple insteaded of chunking it. I love the spices, and this one is a keeper! - 8/27/09

    Love it! I used only half the amount of mayo and vinegar, that was enough dressing for me. I also added half a skinless cooked piece of chickenbreast meat cut up as well. Great for a filling one bowl meal! - 2/8/10
